Bacon Wrapped Chicken Breast With Veg Stir Fry

Tender chicken breasts get an extra classic touch when wrapped with tasty bacon. The breast stay moist and full of flavor. The Bacon wrapped check breast is an easy dinner and in this recipe we will serve it with vegetable stir fry.

Step 1

Ensure you cut the breast evenly, so they are the same size and parboil them for about 5 minutes

Step 2

Wrap the breasts with bacon and secure with toothpicks. Tip: Before using the toothpicks kip then in water for about 30 min, this will ensure they will not burn when frying.

Step 3

Spread marinade over the wrapped breasts, I used Chicken Tikka Masala to marinate, you can use any marinade of your choice. Let marinate for about 1 hour.

Step 4

Roast the marinated breasts in preheated oil on medium heat turning sides until golden-brown and crispy.

Step 5

For the veg stir fry. Heat oil over medium heat add carrots and mashroom and cook for about 5 minutes until tender.

Step 6

Add the broccoli, bell peppers, peas, green beans and 2 tablespoons of water to the pan. Cook for an additional 3-5 minutes or until vegetables are tender and water has mostly cooked off.

Step 7

Add soy source and cook for 1 minute. Season with salt and pepper to taste and serve
