Bell Pepper Egg-in-a-Hole

The pepper egg-in-a-hole is a super easy, healthy, light breakfast. A great way to add veggies to your breakfast.

Ingredients

Step 1

Clean well large bell peppers, you can use different colors

Step 2

Slice bell peppers horizontally into thick rings of about 1cm

Step 3

Remove any seeds and the white flesh from the pepper rings

Step 4

Heat cooking oil in a pan over medium heat and place the sliced peppers into the pan and let them saute for a minute.

Step 5

Crack one egg into the center of each bell pepper ring and keep your heat low.

Step 6

To keep the egg from running under the pepper too much, pour the egg in slowly. Some of the egg will leak you can use a spoon to remove the leaked egg.

Step 7

Let the egg cook on low heat until the yolk is well done, you don’t need to flip the rings.

Step 8

Season with salt and pepper and serve.
