Roasted chicken with mashed potatoes is an irresistible recipe with creamy texture and is extremely delectable. With veg stir fry on the side this meal has everything in one dish. Great for get together events.
Cut and boil potatoes until tender.
Add butter, cheese and milk and mash using a patato masher or manually. Season with salt and pepper to taste.
Parboil the chicken quarters for about 10 minutes
Spread marinade over the chicken, I used Chicken Tikka Masala to marinate, you can use any marinade of your choice. Let marinate for at least 1 hour
Roast the chicken in pre heated oil until it’s golden brown and crispy.
Heat oil over medium heat add carrots and mashroom and cook for about 5 minutes until tender.
Add the broccoli, bell peppers, peas, green beans and 2 tablespoons of water to the pan. Cook for an additional 3-5 minutes or until vegetables are tender and water has mostly cooked off.
Add soy source and cook for 1 minute. Season with salt and pepper to taste and serve
