Sweet Potato – Mbambaira Crisps

Homemade crispy, delicious, salty deep fried sweet potato chips make the perfect healthy snack.



Step 1

Wash the sweet potatoes well.

Step 2

Cut the ends of the sweet potatoes

Step 3

Using a peeler or knife carefully peel the sweet potatoes.

Step 4

Slice using a slicer or a greater. You can also use a knife but it’s difficult to get the same thickness consistency and it takes time than with a slicer.

Step 5

Wash the sliced sweet potatoes with cold water, this will remove any starch.

Step 6

For the crisps to come out very crispy they need to be dry before frying them. Spread the slices over a paper towel, the paper towel will absorb water from the sweet potatoes.

Step 7

Put another paper towel on top and spread another layer of the slices.

Step 8

For the slices to dry well put them under direct sunlight for 1 to 2 hours. The more drier they are, the more crispy they will be.

Step 9

Add cooking oil to a pot and let the oil heat.

Step 10

Once the oil is hot enough add the sweet potato slices. Fry in batches.

Step 11

Deep fry each batch for about 5 minutes and remove from the frying pot using a strainer.

Step 12

Put the fried slices on a paper towel for some time until they lose all the oil and sprinkle salt.

Step 13

The sweet potato crispy are ready to serve!
