Cheesy rice balls are also known as Arancinis in Italian cuisine. It is the most popular appetizer in Italy. You can make them with left over rice. The taste of these rice balls is incredibly delicious.

Make sure all the ingredients are ready before you start.
In a large bowl add 2 cups of cooked rice, you can even use left over rice
Add chopped parsley, finely chopped onion and half a cup of mozzarella cheese
Add half a cup bread crumbs, black pepper and ginger powder.
Add one medium size egg for binding and mix well.
Wet your hands with water and make medium size fine balls. Put a small block of cheddar cheese in between.
Repeat watering your hand before making every ball.
In a bowl put 1 cup of flour, in another bowl put the remaining 1 cup of bread crumbs, and in another bowl put two eggs and whisk well.
Take a ball, cover it with flour then dip in the egg bath and coat with breadcrumbs. Perform this process with all the balls.
Refrigerate the balls for 20 minutes
Heat your cooking oil at medium-high heat to deep fry the arancini balls.
Deep fry the rice balls until golden brown. They take about 2 minutes to get ready. Donβt overcrowd the pot it will affect the temperature of the oil
Once they are golden brown on all sides put them in a plate to cool
Garnish with chopped parsley and serve
